About the Author
Reimara Valk, PhD, has lived and worked in various countries across the globe, including India, China, Malaysia, and Iraq. She had several cross-cultural food experiences and food-related health shocks, which led her to focus on nutrition in order to minimize health complaints and maximize her energy levels and well-being. Paul Matalski was the youngest of seven kids, born and raised on a farm on the prairies of Canada. He grew up with a wide variety Polish and German foods. After leaving his home in Saskatchewan, he worked in the oil and gas industry, taking him to many countries across the globe. After losing several family members to cardiovascular disease, he began developing recipes designed to enable healthier eating.
